Spicy chicken salad with avocado


chicken salad
About 100 gram of skinless chicken(chicken filet)
One avocado
60 grams of your favourites pasta
Mixed salad
Some mini tomatoes
1,5 tbsp oil
Enough cayenne pepper to cover all of the chicken
Salt and pepper to taste

Slice your chicken into strips about 1 cm wide and 4 to 5 cm long. Put them in an ovenproof dish and cover with the oil and cayenne pepper, mix & make sure every part of the chicken is covered.
Put the dish in an oven( 160 degrees Celsius ) for about 20 min, after the 20 min check if the chicken is done by slicing open the biggest piece and checking for pinkness inside.
When done take out of the oven and let it cool.
Cook your pasta according to the packaging, I like to keep mine a bit chewy if I'm putting it in a salad. Rinse with cold water and let it cool down as well.
When the chicken is cooled enough slice it into 1 by 1 cm pieces. Do a little taste test and add salt and pepper to taste.
Grab your plate or serving dish and toss some mixed salad on there, add the pasta and slice the mini tomatoes in half and add them as we'll. Get your avocado slice it in half take out the seed and take of the skin, cut into 1 by 1 cm pieces and add to your plate.
lastly add the chicken.


I like to sprinkle over a bit off balsamic  vinegar dressing but you can experiment with any dressing you like.

The cool taste of the avocado goes perfectly with the spicy chicken.

Pumpkin Time

Yesterday I bought my very first pumpkin at the grocery store. Right now I am deciding what to do with it. I am quite sure I want to carve the pumpkin but I'm not sure on the design yet or what to do with all the delicious insides of the pumpkin.

Banana cake

Banana Cake

I love baking cake, it’s an easy task and it’s hard to screw up. Since I had a lot of bananas laying around and the heat made them ripen with the speed of light, I decided to make a banana cake. I like how it turned out, so I wanted to share my recipe with everyone.

I wanted to make a small cake so I only used 1/3 of the ingredients listed in the recipe below.

What you will need to make the Banana cake:

  • a baking dish which holds 1.5Liters
  • 80 ml olive oil
  • 3 bananas
  • 180 grams of flour
  • 180 grams of white sugar
  • 1 egg
  • 3 grams of baking powder
  • 2 grams of baking soda
  • some confectioners sugar and an extra banana for decorating

The steps:

  1. preheat the oven to 175 degrees Celsius
  2. mix together the flour, sugar, baking powder and soda power in a bowl.
  3. mash the bananas in a separate bowl and mix it with the egg and oil.
  4. add the banana mixture into the bowl with the dry ingredients and mix until smooth
  5. pour the mixture into the baking dish and tap the dish on your counter to make sure all the air bubbles are gone.
  6. bake for 45 to 55 minutes depending on your oven. 

To check if your cake is finished, poke a wooden skewer into the cake. If it comes out dry your cake is done.

Simple recipe: microwave apples

I found this recipe on tumblr and loved it right away.microwave apples
Ingredients:
one apple
cinnamon powder
yoghurt
Steps
step 1: Cut the apple in slices
step2: Sprinkle some cinnamon powder over the apple slices.
step3: Microwave them for 1 min, depending on your microwave and thickness of the slices. Mine was on 700 Watt and the apple slices were up to 1 cm thick
step 4: Pour some yogurt over the apple slices
step 5: Grab a fork and enjoy.

Simple Recipe: Pannekoeken

today we will be making Pannekoeken which is the Dutch version of pancakes.

Pannekoeken are a bit ticker than French crepes but a lot flatter than American pancakes. This recipe isn't as simple as the last 2 but once you get the hang of it, its a super easy dish to make.
ingredients:
200gr Flour
3 eggs
300ml milk
a little butter to bake in
the steps:
step 1: break the eggs into a bowl and beat them lightly until it become’s smooth and yellow.
step 2: stir the milk into the mixture
step3: while stirring add the flour little by little and keep stirring until you get a smooth mixture.
step 4: let the mixture rest for about 30 minutes.
step5: heat up a little bit of butter in a frying pan.
step 6:get yourself a big spoon en use it to pour the mixture into the pan. try to cover the whole surface of the pan, but keep in mind it should be a thin layer.
step7: now wait patiently for the batter to solidify before you flip the pancake. I always shift the pan a little to make sure the pannekoek doesn't stick to the pan.
step8: after the pannekoek has been cooked on both sides transfer it to a plate and cover with another plate to keep the pannekoeken warm until you finish making all the pannekoeken.
step9: enjoy your pannekoeken with sugar, syrup or anything you can imagine. Just spread your filling on top of the pannekoek, roll it up and slice into little pieces.

Simple recipe: chicken nuggets

This weeks simple recipe is a dish I can never get enough from.DSCN0572
These chicken nuggets are really easy to make and  taste a lot better than the fast food chain stores nuggets(in my opinion).
Ingredients:
boneless chicken breast
cornstarch or breadcrumbs
an egg
Steps:
step 1: cut the chicken breast into nugget size chucks (making sure to remove the sinew)
step 2: lightly beat the egg in a bowl and put all the chicken pieces in.
step3: fill a shallow plate with a bit of cornstarch or breadcrumbs
step 4: take out a piece of chicken (making sure its fully coated with the egg) and roll it around in the cornstarch or breadcrumbs.
do this until you have coated all the chicken nuggets.
step5: heat up oil or butter in a frying pan.
step 6: add the chicken nuggets to the frying pan and cook for about 10 minutes, turning the nuggets every 2 to 3 minutes.
step7: cut the biggest nugget in half to check if they are done transfer to a plate and enjoy.
I like to eat my chicken nuggets with sweet chilly sauce.

Chocolate & fruit tortilla

Made some chocolate & fruit tortillas.chocolate & fruit tortilla
After finding Kris Mullen's awesome post on fruit taco’s on Pinterest, I had to try them out. Unfortunately for me I couldn't find some of the ingredients like the agave nectar. I had to tweak the recipe a bit which made forming the tortilla into a taco a living hell. After some struggle I settled for just folding them up and sticking a wooden pick into them.
I used other fruits than she did: strawberries, kiwi,cherries & pears. they tasted delicious.

Simple recipe: French toast

First of in this little simple recipe series is the French toast.
french toast recipe
Ingredients:
brown or white bread slices (I like using brown bread)
butter or oil ( for baking the toast)
1 egg per 2 or 3 bread slices
a dash of milk
sugar to taste
cinnamon powder (optional)
Steps
step 1: softly beat the eggs in a shallow plate until nicely mixed.
step2: add in the milk and the sugar and mix again.
step3: heat a little butter or oil in a frying pan.
step 4: soak the bread in the mixture making sure both sides are soaked with the mixture.
step 5: add the soaked bread to the pan and quickly cook them until brown on both sides.
step 6: remove from pan and add the cinnamon powder or enjoy them without

the weekend

This weekend was a busy weekend with a lot of Football matches and a 5 km run.DSCN0531

natural flavoured water

Making your own flavoured water is easy and a great way to stay hydrated in the summer.

After seeing Monica’s post over at the yummy life about how to make your own natural flavoured water I had to try it myself.

I decided to use red grapefruit an orange and a bit of cucumber for my flavoured water.

Sumo

so last Saturday I went to Sumo with some friends. firstly let me explain what Sumo is. Sumo is a Japanese al you can eat restaurant in the Netherlands.

Although I was quite sick that day I had the time of my life. I even tried the Skewered Ink fish (or Cephalopod). I will definitely visit again.

microwave mini chocolate cake

had this recipe written down in folder to post for about a month now and yesterday while having a DHTDAOGOSCDAIMPAD day(don't have to do anything or go outside so can dance around in my panama's all day). I was finally able to make photo’s of the progress so I could post this one. you will need the following

60ml flour
60ml nesquik
10ml sugar
6ml baking powder
45ml water
45ml oil

Firstly mix together the flour, nesquik, sugar and the baking powder in a drinking mug.DSCN0361 Then when fully mixed and in the water and oil. Mix again until you have a smooth mixture.DSCN0362

Put the cup in the microwave and microwave it for about 2 min on full power ( my microwave goes up to 800) stay close and make sure the cake doesn't rise to much and overflows the cup. It will be a sticky mess which is not fun to clean at all. After 2 min let it rest for a bit it way to hot to east directly. You could try taking the cake out of the mug but I usually eat it as it is with a spoon. DSCN0363Ok in this photo the cake actually started caving back in. I made the one on the photo at my boyfriends house and I don't get his microwave at all. So I guess 2 min was too long in his microwave.

Rainbow week

so this week I'm having a rainbow week. which is this weeks challenge over at http://blogilates.com/. The rules are explained over there but here a bit of the info.

  • MONDAY: RED
    • red foods have lycopene which decreases your risk of heart disease and protects your skin from sun damage
    • ex: tomatoes, red pepper, chilli, guava, watermelon, pink grapefruit
  • TUESDAY: ORANGE
    • orange foods have tons of vitamin A which helps with low light vision!
    • ex: sweet potato, orange, carrots, cantaloupe, winter squash
  • WEDNESDAY: YELLOW
    • yellow foods help decrease joint inflammation
    • ex: banana, yellow bell pepper, pineapple, corn, yellow squash
  • THURSDAY: GREEN
    • green foods play an important role in stimulating new tissue growth and hindering growth of bacteria
    • ex: broccoli, kale, kiwi, green beans, asparagus, avocado
  • FRIDAY: BLUE
    • blue & purple foods help prevent short term memory loss – blueberries in particular help your brain respond better to incoming messages and might spur new growth of nerve cells
    • ex: blueberries, blackberries
  • SATURDAY: PURPLE
    • ex: radish, red cabbage, beet, plum, eggplant
  • SUNDAY: EAT THE RAINBOW
    • Try to eat one of every colour today! Either in one meal or throughout the day!

 

I love Cassey for making such great challenges. So today is Monday and I’m eating red. the best I came up with so far is an apple. But its still early and I have the whole day ahead of me. making dinner for the boyfriend

 baking tin lid  the pan didn't have a lid so I used a baking tin.. it worked quite well.the resultthe finished result, my boy friend loved it which is good cause I made way to much so we are eating it again tonight.the mess

he didn't like the mess I made of his kitchen though.
